One of the neat things about joining a CSA is that it's forced us to think outside the box and discover new recipes. And I'm so glad we discovered this grilled halloumi salad recipe by Jamie Oliver. It's so, so yummy. A perfect spring salad, and the cheese makes it filling enough to be its own meal.
We don't have a speed peeler, so I used the slicing attachment on my food processor (side note: I recently accepted that my food processor is actually the easiest, fastest way to prepare pretty much everything and also is really not the big deal to clean that I try to convince myself it is).
In closing, this meal is healthy, easy to make and really delicious. Seriously, go make it right now.
