We're big Canadian Living fans around here, so when they asked me to be part of their blogger network, I jumped at the chance. Adam's mom gave us a copy of 1987 edition of The Canadian Living Cookbook, which quickly became one of our go-tos, and I use their online recipe finder pretty regularly (ahem, cinnamon sugar crinkle cookies). Anyway, I was excited to try the superfood platter recipe from their upcoming March issue.
As a vegetarian (OK technically we're pescetarians, but how pretentious does that sound?!), most of the ingredients are staples in our kitchen, but this was a new way of combining them and man, it was good. I think the toasted almonds were my favourite part.
De-stemming the kale was the most tedious part (does anyone else hate that about kale?), but I made the recipe when I got home from work and was able to get it on the table in about 30 minutes. What's not to like about a healthy, tasty meal you can make in 30 minutes or less? Hannah loved it, too.
